Bolo Bakery

Ms. Jillian Farrell is going to tsk-tsk me for how late I am posting this, but, in my defense, my brain is mush from studying for exams :(. Sunday, Stan and I met Jill and her friend Mary for breakfast at Bolo Bakery, a Portuguese bakery in Plainville right next to the hair salon I used to live on top of a few years ago. Initially, we went there to acquire cupcakes like the one seen in Jill’s post, but it was 11am and Stan and I hadn’t eaten breakfast.

I ordered “The Portuguese” — 2 fried eggs, prosciutto, and Portuguese Gouda cheese served on a Portuguese roll; and a bowl of fruit. It was the best breakfast sandwich I’ve ever had, hands down. As for cupcakes, I had to get the Red Velvet after Jill raved about it so much, and I also bought a Pistachio one because I’d never had a pistachio cupcake before. They were only $4 each and ENORMOUS {I took a picture holding it for reference}. It took me two days to eat the red velvet, and I couldn’t finish the pistachio, but they were both insanely delicious. The cream cheese frosting on the red velvet was very thick, but not too cream cheese-y, while the pistachio frosting was a chocolate mousse.

Anyway, I highly recommend Bolo — either for breakfast or for desserts {they have tons of other yummy pastries, doughnuts, tarts, etc.} and their lunch menu looks pretty spectacular, too. They’re located at 33 Whiting Street in Plainville.

…Now back to studying for my exams!

UConn Greenhouse Adventure

Seeking shelter from the awful weather we had yesterday, Mayya and I headed to the UConn greenhouses. There weren’t many other people there, so we loudly exclaimed our excitement about each tree, herb, and flower while bird songs were played over the speakers. I’d never been to the greenhouses before Mayya brought me a few weeks ago, and I’m so glad she did! It’s like stepping into a natural wonderland! I’m really thinking about acquiring more plants than the singular lucky bamboo in an elephant pot that Stan and I own. Here are a few photos I took with my iPhone while we were there:

This is my favorite one, and I’m pretty excited that it came out so well considering I took it with my iPhone, standing on my tippy toes and reaching over a bunch of scary pricker bush-type plants.

Bright Tights, Little City.

I just bought these wonderfully bright & spring-y tights from We Love Colors {Remember Stan’s sister’s guest post about them?}. During our styling session, Sabrina and I talked about creative ways to add color to my outfits and bright tights were one solution. Going by the first photo above, from left to right, I have Amethyst, Yellow, White, and Orchid Pink. See them in action below:

Chocolate-Chocolate Pancakes

I promised you the recipe for Chocolate-Chocolate Pancakes in my ReStyle ReVisted post, so here it is! My mom used to make these for my sisters and I when we were little, and now I rarely eat pancakes that aren’t chocolate-chocolate {one “chocolate” is for the cocoa powder in the batter and the second is for the chocolate chips}. You can use any pancake batter you like, but I use Hodgson Mill’s Insta-Bake Whole Wheat mix {you can find this in your local grocery store}. I use the recipe on the back of the box, omit the sugar, and add in cocoa powder and chocolate chips to taste.

For 10-12 Pancakes:

  • 2 cups Hodson Mill baking mix
  • 2 eggs
  • 1 ¼ cups milk
  • 2 tbsp. vegetable oil
  • 1½ – 2 tsp cocoa powder
  • chocolate chips
  • whipped cream

Mix all of the ingredients together except the chocolate chips & whipped cream in a medium mixing bowl. I like to add my chocolate chips in after I pour my pancakes onto my griddle, but you can mix them in the batter if you’d like. Top your cooked pancakes with whipped cream, and complete your meal with eggs, bacon and OJ for a truly spectacular breakfast! <3
